Coconut Chutney is great accompaniment with South Indian breakfast recipes like Dosa,Idli,Vada,Upma.And my recipe can be made in 5 mins that is equally delicious as the restaurant one.
Time 5 mins
1 cup Roasted unsalted Peanuts
1/2 cup Shredded Unsweetened dry coconut or fresh coconut
2 string of curry leaves
small piece of ginger
4-5 green chilies
salt to taste
1/2 tsp of mustard seeds
1/2 tsp cumin seeds
1/2 tsp of urad dal
Pinch of hing/Asafoetida
- Combine together all the ingredients in a blender and grind to paste.Take it in a bowl and keep it aside.
- For tadka heat a pan with little oil or no oil allow the mustard seeds to splutter then add jeera ,urad dal,Hing fry till the urad dal color changes to brown in reduced flame.
- Then top it up onto the Coconut chutney.It is completely optional to season/Tadka.It tastes equally good without seasoning as well.
- This Chutney is good for Idly ,Dosa ,Upma & Vada.
