Thai inspired pineapple fried rice is mix of exotic colors of vegetables with combination of left over rice.It is a quick,delicious and healthy meal for a lunch or dinner.

Makes 4-6
Ingredients:
1 cup cooked rice or left over rice
1/2 Red bell pepper(finely chopped)
1/2 Green bell pepper
4 Beans (finely chopped)
1 Small onion(finely chopped)
1/4 cup Carrot finely chopped
1/2 cup ripe pineapple diced
2 Garlic cloves minced
1 tsp of minced ginger
5-6 Roasted cashews
1 tsp of Red chili flakes
1 tsp Roasted sesame seeds
1 tsp curry powder
1 tsp Soy sauce
1 tsp Olive oil or any oil of your choice
Salt to taste
chopped spring onions to decorate(optional)
Procedure:
- Heat a pan with oil and add ginger,garlic,onion saute for a minute till the raw flavor is gone.
- Then add rest of the vegetables(green,redpepper,beans,carrot,pineapple,cashews,salt) saute for 2 mins.
- Now add all the seasoning red chili flakes,curry powder,soy sauce,roasted sesame seeds.Mix them well and let it cook for a minute.
- Then add rice mix everything together and then remove from the stove top.
- Serve hot and enjoy,
