Ginger Chutney

This is an awesome quick chutney i have learnt it from my mom.She makes it for idli,vada,upma,dosa or simply as a side with rice.

Makes 4
Times 10 mins

1/2 inch ginger
2 green chillies
1/2 cup tamarind pulp
4 tbsp jaggery or sugar
salt to taste

For seasoning:
4 Red chilies
1/4 tsp Meethi seeds
1/2 tsp mustard seeds
pinch of Hing
1/4 tsp of oil

Procedure for Seasoning:

  • Heat oil in a pan add all the seasoning ingredients and roast them till they turn light brown in color.
  • Allow the seasoning to cool down and make into a fine powder in a mixer/blender.
  • Set a side the fine powder.

Procedure for Chutney:

  • In a blender add ginger,green chillies,tamarind pulp,jaggery,salt ,seasoning powder and make into a fine paste.
  • The sweet,tangy ginger chutney is ready to serve with rice,idly,upma,dosa.
  • You can store this chutney in refrigerator upto 10 days.
