Sweet Nimiki is crunchy and tasty cracker soaked in a sugar syrup with some cardamom flavor.

1 cup Whole wheat flour or All purpose flour
1 tsp Semolina (optional)
1 tsp Clarified butter(ghee)
pinch of salt
water to knead
Oil to deep fry
For Sugar Syrup:
1 Cup Sugar
1 tsp cardamom powder
1)In a large mixing bowl add flour,semolina,clarified butter,salt mix well and slowing add water to knead a firm dough.
2)Divide the dough into 4-5 equal parts and roll into a 6 inch disc.Using a knife cut the disc into vertical and horizontal lines making a square or triangle shape.
3)Heat the oil in a pan and when the oil is hot enough,then add the crackers into the oil fry until they turn golden brown.Transfer them onto a paper towel and set aside.
4)Heat a pan with one cup of sugar with few drops of water and cardamom powder.Bring the syrup to a one string consistency and transfer all the crackers into the mixture,switch off the flame and mix thoroughly until all the crackers are coated with sugar.
–It lasts in an air tight container for up to 15-20 days.
