Barley soup

It simple easy to make and delicious one pot meal with lots of vegetables boiled in a vegetable broth along with barley.  This soup  is hearty and filling. I also added some left over mung sprouts.

Prep time:10 mins
cook time: approx 60 mins

1/2 cup barley
1 cup diced vegetables(celery, carrot, green beans,bell pepper, onion, corn, mung sprouts)
1 and 1/2 cups vegetable broth or water
1/2 cup tomato puree
salt and pepper to taste
1tbsp crushed garlic
1tbsp sambar powder(optional)
1tbsp Olive oil
1tbsp cilantro or parsley(optional)

1)Sautee onion, celery and garlic in oil on a medium heat for 2-3mins or until the onion is translucent.
2)Add rest of the vegetables ,sprouts ,barley, tomato puree and cook for 3-5 minutes, stirring occasionally.
3)Add stock bring to a boil and then simmer on medium to low heat for 30-40 minutes or until barley and vegetables are cooked.
4)Serve hot and garnish with your favorite herb.

-Add any vegetable/leafy vegetables you have available in your fridge.
