Spinach Soup is healthy and packed with nutrition. I am using almond milk and cashew paste to may it creamy.

2 cups Spinach(washed and roughly chopped)
1 medium onion diced
2 garlic cloves
1/2 cup vegetable broth or water
4 Unsalted roasted cashew
1/4 cup of Almond milk
salt to taste
1/2tsp Olive oil
Pepper to taste
Crushed pepper to taste
1)Heat a pan on a medium flame with oil and add garlic & onions fry for few minutes.
2)Add chopped spinach ,salt, turmeric, cashews stir well and then add vegetable broth/water bring it to a boil.
3)Allow it to cool and transfer it to a blender to make a puree.
4)Transfer the puree to the pan bring it to a boil and add almond milk stir thoroughly.
5)Switch off the flame and Serve hot, garnish with crushed pepper.
