It is a typical South Indian breakfast recipe prepared with combination of vegetables along with vermicelli. They are different types of vermicelli available in the market like Ragi(millet),rice,whole wheat etc…,you can follow the same recipe.

1cup roasted semiya/vermicelli
Instructions for Roasting vermicelli:
Heat a pan with a 1/2 teaspoon of clarified butter on a medium flame and add vermicelli roast until it turn golden brown.
1 medium onion finely chopped
3 green chilies finely chopped
1/2cup finely chopped vegetables(green beans,carrots,potatoes,green peas)
1tsp finely chopped ginger
5 unsalted cashews
salt to taste
1tbsp lemon juice garnish(Optional)
1/4tsp chana dal
1/4tsp urad dal
1 dry red chili
1. Heat oil in a pan on medium flame then add all the seasoning fry until they turn golden brown.
2.add onions, green chilies, cashews,curry leaves,ginger,salt and sauté for 2-3 minutes.
3.Then add mixed vegetables mix thoroughly and add water bring it to a boil .
4.Add roasted vermicelli and allow it cook on a medium flame covered until the water is evaporated.
5.Switch off the stove and serve hot ,garnish with lemon juice .
-Vermicelli and water ratio is 1:2.If you add more water then it will become soggy.
-Dry roast vermicelli in clarified butter give it a wonderful aroma.
