Carrot halwa is my a favorite Indian dessert it is made with a combination of fresh grated carrots sautéed in clarified butter(ghee) slow cooked along with milk and garnish with dry fruits like cashews, almonds and raisins.

Makes 5-6
Ingredients:
4cups grated carrots(I used Delhi red carrots that are available in Indian store but you can use any carrots)
4cups Milk (Preferably full fat milk)
2-3tbsp clarified butter(ghee)
1/4 cup of roasted unsalted nuts(cashews, almonds and raisins)
1tbsp green cardamom powder
1/4 to 1/2 cup of sugar or add according to your taste
Procedure:
1)Heat a non stick pan on a low flame with clarified butter(Ghee) sauté the dry fruits and set aside.
2)Add grated carrots and sauté for few minutes , add milk and slow cook on a low flame until ghee starts to separate and milk is evaporated this process would take approximately 1 hr.Stir occasionally during the process.
3)Add sugar, dry fruits, cardamom powder and stir frequently until the halwa turn into a thick and glossy texture.Serve warm with a vanilla ice-cream or cold. eat as is
