Paneer wrap

These wraps are quick,healthy and can easily be made for quick week night dinner, lunch or breakfast. They are made with Indian cottage cheese sauté with bell pepper and some Indian spices. You can easily replace paneer for tofu and tortilla, naan, roti for a lettuce cups.

1Cup of fresh paneer(Indian cottage cheese) or Tofu
2Cups of chopped bellpeppers(aka capsicum)
1 cup chopped onions
1tomato finely chopped
2tbsp minced green chilies
2tbsp of minced Ginger and garlic
1tsp oil

For Seasoning:
1 and 1/2tbsp garam masala
1tbsp of Coriander powder
1tbsp Roasted cumin powder
1tbsp Red chili powder
salt to taste
1tspchaat masala
pinch of salt
Pinch of turmeric

For Garnish:
2tbsp chopped cilantro & mint leaves(optional)

1)Heat a pan on a medium flame with oil and add chopped onion fry for couple of minutes 2)Add bell pepper,green chillies,ginger garlic paste, salt, turmeric and sauté for few two minutes until bell peppers are half cooked then add tomatoes cook until they are soft and then add in paneer mix well.
3)Add all the seasoning mix well ,turn off the stove and garnish with mint & cilantro ,set aside.

4)Heat a tortilla wrap or homemade roti(left over works great) and then place the 2 to 3 tbsp. of the mixture and add 1tsp of cheese  wrap it and enjoy.



-You can easily substitute paneer with Tofu or tempeh.
-Use dairy free cheese for regular cheese.
-Instead of tortilla wrap substitute with lettuce wraps.
