Vegetable upma is a typical South Indian breakfast recipe prepared with combination of vegetables along with semolina(sooji).

1 cup roasted semolina(sooji)
Instructions for Roasting Semolina(Sooji):
Heat a pan with a 1/2 teaspoon of clarified butter on a medium flame and add semolina roast until it turn golden brown.
2 1/2 cups water
1 medium onion finely chopped
3 green chilies finely chopped
1/2 cup finely chopped vegetables(green beans,carrots,potatoes,green peas,corn)
1tsp finely chopped ginger
5 unsalted cashews
salt to taste
1 tbsp lemon juice garnish(Optional)
1/2 tsp turmeric
1/4 tsp mustard seeds
1/4 tsp cumin
1/4 tsp chana dal
1/4 tsp urad dal
1 dry red chili
2 tsp oil
1. Heat oil in a pan on medium flame then add all the seasoning fry until they turn golden brown.
2.add onions, green chilies, cashews,curry leaves,ginger,salt and sauté for 2-3 minutes.
3.Then add mixed vegetables mix thoroughly and add water bring it to a boil .
4.Add roasted semolina and allow it cook on a medium flame covered until the water is evaporated.
5.Switch off the stove and serve hot ,garnish with lemon juice and mango pickle or coconut chutney.
