Hummus Quesadillas are our favorite week night meal.They are healthy, protein rich and easy to make.Spread two spoonful of hummus onto the tortilla and add grilled
vegetables and cook on a griddle until cheese melts.Serve hot with guacamole.

1 packet brown rice tortilla
1/4 cup tex mex cheese (optional check below for cheese free variations)
1/2 cup homemade hummus or store bought
2 tbsp olive oil
1 cup mix bell pepper
2 cup mushroons
For Seasoning vegetables
salt to taste
pepper to taste
1 tsp cumin powder
2 tsp coriander powder
1/2 tsp turmeric
1 tsp red chili powder
-Heat a pan on a medium flame with oil and add the vegetables and cook until they are done.
-Add all the seasoning for the vegetables saute for a couple of mins. Switch off the stove and set aside.
-Spread two spoonful of hummus onto the tortilla on one half and add grilled
vegetables,a teaspoon of cheese and cook on a griddle until cheese melts. Serve hot with guacamole.
No Cheese(to make a cheese free quesadilla)
-You can skip the cheese and add hummus on both sides of the wrap. It will bind vegetables and keep them in place.
-Another variation involves spreading hummus on one half and guacamole on the other.
