My take on the quick &easy homemade enchilada sauce. It is tasty better than anything you can buy in the can.

Ingredients for Tomato sauce:
5 medium tomatoes
2 cups of vegetable broth
3 roasted garlic
-Wash tomatoes and place them in the pressure cooker with vegetable broth and put on the lid and pressure cook for couple of whistles. Turn off the stove and allow it to cool down before you take the lid.
-Peel the tomatoes and roasted garlic. Place it in the food processor add the liquid used for cooking the tomatoes .Pulse until it is smooth and set aside.
Ingredients for enchilada sauce:
2tbsp all purpose flour or gluten free flour
1/2tsp Cumin powder
Salt to taste
pepper to taste
1 chipotle pepper or 1tsp Kashmiri chili powder
1/2tsp dried oregano
1.Heat oil in saucepan over medium heat. Add flour and whisk together for one minute.
add the tomato sauce and whisk constantly so that no lumps are formed. Now add all the remaining spices(salt, pepper, chili pepper, cumin, oregano) mix well.
2.Reduce the heat and simmer for 10-15mins or until the sauce the thickened.
3.Switch off the flame and top it on the black bean enchiladas. Below is the sneak peek of the black bean enchiladas. Detail recipe follows in my next post :).
-You can store the unused sauce in Mason jar for up to 3 days in the fridge.
-Use vine tomatoes for this recipe or canned tomatoes to speed up the process.
