Green beans & carrot stir fry

Steamed Green beans and carrot cooked along with fresh grated coconut. Served with steamed rice or quinoa along with some lentil stew.

Cook time:10mins

Serves 3-4

Ingredients:
2cups steamed green beans finely chopped
1cup Steamed carrot finely chopped
few curry leaves
1/4cup fresh grated coconut blend along with couple of dry red chilies and set aside.
pinch of turmeric
salt to taste

For Seasoning:
1/2tsp chana dal
1/2tsp cumin seeds
1/2tsp mustard seeds
1/2tsp urad dal
1 dry red chili
1tsp coconut oil

Procedure:
-Heat a pan with coconut oil on medium low flame and add all the seasoning allow them to splutter and turn golden brown.


-Add curry leaves, steamed  beans, carrot, salt, turmeric mix well and sautee for few minutes.
-Now add the grated coconut mixture mix well .Switch off the stove and serve hot with steam rice as side along with some lentil stew.

Notes:
-All the seasoning add extra crunch to this dish.
