Spinach & Swiss chard pakora (fritters) are prepared with chickpea flour, rice flour along with some seasoning and deep fried or baked until it is golden brown and crispy. It can be served as a tea time snack.
2cups chopped spinach and Swiss Chard
1 cup chickpea flour
3 green chilies finely chopped
1/2tsp red chili powder
1tsp cumin seeds
1tsp ginger garlic paste
1tsp rice flour (for crispy texture)
pinch of turmeric
1tsp hot oil
oil for deep frying
1)In a large bowl add finely chopped Spinach, Swiss chard, green chilies, red chili powder, salt, cumin seeds. Mix everything together allow it to rest for 5mins.
2)Then add chickpea flour, rice flour, 1tsp hot oil and mix well without adding water. Until the greens are coated with flour and add few drop of water if needed.
3)Heat oil for frying and once the oil is hot enough then take small portion of mixture by hand or by spoon and drop 3-4 small fritters into the oil.
4)Deep fry until it turns golden brown. Keep stirring occasionally until they cook evenly.
5)Drain any excess oil and place the fritters on a paper towel to remove any excess oil. Repeat the process for rest of the mixture . Serve hot with tea.
-If you want to bake them add less flour and bake at 350F for 20-30mins until they’re crispy. Stirring occasionally.
-Green has moisture and it helps to bind the flour without adding water. If needed add few drops.
-Do not overcrowd fritters in oil they will not cook evenly and become soggy.
-It is completely optional to leave out Swiss Chard if it is unavailable.
