Raw mango rice

This south indian raw mango rice is mild,spicy & tangy.It is usually prepared as part of most Indian festivals either with tamarind paste or lemon juice or raw mango when available in season.

Prep time:10 mins
cook time:20 mins
Serves 2-3

Ingredients:
1 cup cooked rice
1 grated raw mango(wash and peel the skin of the mango and finely grate.set aside)
few curry leaves
5-6 roasted cashews
4 Green Chilies finely chopped
salt to taste

For Seasoning:
1/2 tsp chana dal
1/2 tsp urad dal
1/2 tsp mustard seeds
1 dry red chili
Pinch of hing
Pinch of turmeric powder
1 tsp Oil

Procedure:
-Heat a pan with oil on a medium low flame and add all the seasoning.fry them until they turn golden in color.
-Then add  green chilies,curry leaves ,grated raw mango,salt and turmeric.Cook until the raw mango mixture reaches thick consistency.


-Now add the mixture to the cooked rice and mix thoroughly.Serve it with some yogurt or eat as is.
