Bok Choy chana dal stir fry

Bok Choy is a Chinese green vegetable and it is most commonly used in stir fry. Low calorie nutrient dense green. Today I put together a recipe with bok choy, chana dal, garlic and shredded coconut. It can be served as side for roti, rice or quinoa.

Prep time: 5mins
cook time: 5mins
soak time for Chana dal: 30mins

8 Baby Bok Choy(wash ,pat dry and roughly chop and set aside)
4 fresh garlic roughly chopped
1 medium onion finely chopped
1/4 cup Chana dal( wash, soak ,steam and set aside)

For seasoning:
1/2tsp mustard seeds
1/2tsp cumin seeds
1tsp coconut oil
salt to taste
1tbsp unsweetened shredded coconut

1)Heat oil in a skillet add cumin, mustard seeds allow them to splutter and then add garlic, fry for few minutes on a medium heat.

2)Now add chopped bok choy sauté for few minutes until the greens are slightly wilted.

3)Add salt, chana dal, shredded coconut mix thoroughly and fry for few minutes.

4)Serve hot with roti or rice or quinoa.

-If bok choy unavailable you can use any other greens and follow the same recipe.
