Vegetable Biryani is prepared by cooking basmati rice in aromatic spices and layering it in between the spicy combination of vegetables cooked in a oven.Add saffron to the rice bring a wonderful color and fried onion give a nice aroma and texture to the biryani. Serve it with a salad on side along with some cucumber raita, mango lassi.

Ingredients for Cooking rice:
1 and 1/2 cups Basmati rice (wash and soak rice for 20 mins)
2 green cardamons
1 cinnamon stick
1 black cardamom
2 bay leaves
Salt to taste
Step 1: Procedure: for cooking rice:
-In a large skillet bring 4 cups of water to a boil and then add rice,along with the spices and cook until the rice is 80% done.
-Drain the rice along with water into a colander and set aside.
For vegetable gravy
2 cups of chopped vegetables(potato,carrot,bell pepper,peas,cauliflower,french beans)
1 medium onion finely sliced
3-4 tbsp of finely chopped mint & cilantro
1 tbsp ginger garlic paste
3-4 green chilies cut lengthwise
1 tbsp oil
1 tbsp ghee
1/2 cup yogurt
salt to taste
For seasoning vegetables:
1/2 tsp garam masala
1 tsp coriander and cumin powder
1 tsp red chili powder
Step 2:Directions for cooking vegetable:
-In a heavy bottom pan add oil,ghee and fry onions,ginger garlic paste,mint and cilantro until onions are translucent and then add all the vegetables & all the seasoning cook until done.
-Finally add yogurt and fry for a minute. switch off the flame and set side.
Final step:Assembling everything for Biryani:
-Preheat oven to 180(c) take a large baking tray add a layer of vegetables(from step 2) and then a layer of rice (from step 1) spread evenly and continue the same process for rest of the rice and vegetable gravy.
-Garnish with a layer of fried onions,finely chopped mint & cilantro and some fried cashew.
-Close it with an aluminium foil and bake for 20 mins and Once done serve hot with some cucumber and mint raita along with some mango lassi.
-Add few strands of saffron to couple of tbsp of hot milk for some color.I didn’t use as i was running out of it.
-Adding yogurt to the vegetables gives some nice moisture to rice.
