Masala vada is a wonderful tea time crispy snack .It is prepared by soaking and coarsely making a paste from chana dal (Bengal gram) along with some chopped onion,mint,cilantro,red or green chilies and deep fry until golden brown.

cook time:10-15mins
Ingredients:
1cup chana dal(Bengal gram)
oil for frying
For seasoning:
1 medium onion finely chopped
few mint leaves finely chopped
few cilantro leaves finely chopped
small piece of ginger finely chopped
3-4 green chillies
salt to taste
1tsp cumin seeds
Procedure:
1)Wash,soak chana dal in water for 2 hrs.Transfer the the soaked dal,ginger,green chilies into a blender and make a medium coarse mixture.
add few drops of water if needed.
2)Transfer the mixture to a bowl and add rest of the seasonings.
3)Combine all the ingredient together.Grease your palm with few drops of oil and divide the mixture into 12-14 equal portions.
4)Heat oil for on medium heat when the oil is hot enough drop the 3-4 portions of the mixture and fry until golden brown and crispy.
5)Transfer the vadas onto the paper towel to remove any excess oil.Fry the rest of the vadas the same way and enjoy with some hot tea or coffee.
Notes:
-Add only few drops of water when blending the dal>This will help to absorb very less oil.
-Don’t soak the dal for too long it will absorb too much oil.
-Add few tbsp of rice flour if the mixture has lots of moisture.
-Oil should be hot enough to fry the vada.
