Vangi Bath(Eggplant Rice)

Eggplant rice is prepared by using cooked rice and seasoned with Indian spice powder.
Perfect one pot meal for busy weeknight dinner or lunch.

cook time:20mins
serves 2-3

Ingredients:
1 Jumbo eggplant wash, finely chop and set aside.
2 green chilies finely chopped
1 tbsp finely chopped cilantro
salt to taste
1 tbsp oil
1 cup Cooked basmati rice
2 tbsp tamarind pulp

For seasoning:
1/2 tsp chana dal
1/2 tsp urad dal
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 dry red chili
2 tbsp Vangi bath powderI use this brand

Procedure:
1)Heat a sauce pan with oil and add all the seasonings allow them to splutter,now add eggplant,green chilies,turmeric ,tamarind juice and salt.Toss well.Allow it to cook and stir occasionally until eggplant is tender.
2)Now add vangi bath spice powder mix well and sautee for 3 mins.
3)Finish off by adding cooked rice,mix everything together turn off the stove and serve hot with some plain yogurt on side.

Notes:
-You can follow the recipe by replacing cooked basmati rice for Cooked quinoa or cooked brown rice.
