Idli is a most popular south Indian breakfast they are soft and spongy .It is a steamed rice lentil cake accompained with sides coconut chutney and sambar.It is fermented overnight for 8 hrs at room temparture and the batter is poured into the idli moulds and steammed to make soft and spongy Idli’s.Serve hot with coconut chutney and sambar.
Prep time:4-5hrs(soaking time+ overnight fermentation)
1 Cup Urad dal
2 Cups Idli Rava (wash and set aside)
Salt to taste
Idli Moulds (I use this brand)
1)Wash and rinse urad dal in water until the water runs out clear and soak in water for 4-5hrs.
2)After soaking drain the water into a vessel and grind the dal into a smooth thick paste by adding the water.
3)Mix Idli rava to the batter thoroughly and set aside to ferment overnight at room temperature.
4)Next day when you are ready to eat add batter to the idli moulds and steam cook until 20-25mins on a medium flame.
5)Allow it to rest for couple of mins and serve hot with coconut chutney.
