Carrot rice is easy one pot meal to prepare for a busy week night meal or for work lunch. The sweetness from carrot and nutty flavor from sesame seeds makes it a unique combination. Every bite is flavorful and delicious. Serve it with plain yogurt on side or eat as is.

1 cup basmati rice(wash thoroughly and set aside)
2 cups water
4 carrot (wash, peel and finely chop)
2 medium onions finely chopped
3 green chilies finely chopped
1 string of curry leaves
salt to taste
2tbsp Roasted sesame seed powder
1tsp sesame seed oil or oil of your choice
1/2tsp urad dal
1/2tsp chana dal
1/2tsp mustard seeds
1 dry red chili
1)Heat oil in a pressure cooker over medium heat.Add all the seasoning fry until all the dals turn golden brown.
2)Then add onions,curry leaves,green chilies,salt sautee until onions are translucent.
3)Add carrots,fry for a minute, rice,stir gently into the pressure cooker until evenly coated with oil.
4)Cover the lid and pressure cook for 3 whistles,swtich off the flame .Allow the pressure to realease naturally .Fluff rice with fork.
5)Finally finish off by adding roasted sesame seed powder.Stir gently and serve hot with some plain yogurt or eat as is.
