Whole wheat bread upma quick and healthy breakfast with lots of vegetables and seasoned with some fresh herbs.You can follow the same recipe with any gluten free bread.

4 whole wheat bread slices(Use a toaster to toast the bread slices and cut into bite size pieces.Set aside)
1 small potato finely chopped
1 small carrot finely chopped
2 green chilies finely chopped
1 small tomato finely chopped
1 tsp grated ginger
1 tsp finely chopped cilantro for garnish
few curry leaves
2-3 tbsp of water
salt to taste
3-4 cashews (optional)
1 tsp lemon juice
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp urad dal
1 tsp avocado oil or any oil of your choice
1)Heat a skillet with oil on medium flame add all the seasonings.Fry until they are golden brown.
2)Add onions,green chilies,salt,grated ginger,curry leaves,cashews sautee until onions are translucent.
3)Lets add rest of the vegetables potato,tomato,carrot combine everything together.Cook until the vegetables are tender.
4)Add few drop of water if it is too dry.Now finally add the bread bite size pieces combine everything together until all the bread pieces are evenly coated well with the vegetables mixture.
5)Switch of the stove and garnish with cilantro and lemon juice.Serve hot as is.
