Vegetarian Minestrone soup

Vegetarian Minestrone Italian soup is a nutrious,healthy one pot meal with lots of vegetables,beans and pasta.A complete hearty meal by itself.

Prep time:5-10mins
Cook time:25-30 mins
Serves 5-6

2 and half cups of chopped vegetables(Zuchini,Squash,carrot,celery,portabello mushrooms)
1 medium chopped onion
1/4 cup brown rice pasta
1 cup canned kidney beans
700ml pasta sauce
3 garlic finely chopped
2 cups water or vegetable broth

For Seasoning:
1/2 tsp Italian seasoning
1 bay leaf
salt to taste
1/2 tsp ground pepper
1/2 tsp crushed red chili flakes
1/2 tsp oil

For Garnish
parmesan cheese(optional)

-Heat a stockpot with oil add garlic,onion,celery,salt,red chili flakes,bay leaf cook for few minutes until soft & fragrant.
-Add other vegetables,italian seasoning,pepper cook while stirring frequently for about 2-4 mins.
-Add Tomato sauce,water/broth,beans,pasta bring it to a boil on a medium heat.Reduce heat as required.
-Continue simmering for 20 mins until the pasta is al dente and vegetables are tender.
-Remove the pot from heat,Garnish bowl of soup with parmesan cheese(optional) or serve as is.

-Remove bay leaf after the soup is done.
-You can add your favorite vegetables, greens and beans.
