A healthy delicious quick and easy granola prepared from gluten free or regular rolled oats, nuts,seeds and peanut butter.Sprinkle this crunchy granola on top of some Greek yogurt, coconut yogurt or smoothie bowl.
A great addition for a busy week days breakfast.
Prep time-5 mins
Cook time -15-20 mins
1 cup gluten free rolled oats or regular rolled oats
1/4 cup sunflower and pumpkin seeds
2 tsp flax seeds
3 tbsp chopped almonds or nuts of your choice
pinch of Himalayan pink salt or sea salt
For Peanut butter sauce:
3 tbsp smooth peanut butter(store bought)
3 tbsp honey (if you need more sweetness you can add more)
1 tsp coconut oil
-Mix everything together in a bowl and microwave for 30 seconds.And set aside.
Add at the end:
2 tbsp Goji berries(optional)
2 tbsp Raisins
-In a large mixing bowl add all the dry ingredients along with the peanut butter sauce mixture.Combine everything together until everything is evenly coated.
-Transfer the mixture to a baking sheet spread evenly.Bake at 325(F) for 20 mins.Stirring the oats mixture every 5 mins.
-At the end add raisins and goji berries mix well and bake for couple of minutes.Until oats are golden brown.
-Turn off the oven and allow the mixture to cool completely.
-Transfer granola into a airtight container and enjoy granola for your breakfast.
-You can use your favorite nut butters(cashew butter or almond butter ) of your choice.
-You can replace honey with maple syrup.
