Cauliflower Manchurian a perfect party starter prepared using cauliflower florets dipped into a corn startch+all purpose flour batter and fried until crispy golden brown. It is mixed with homemade Manchurian sauce and garnished with green onion , cilantro. Serve hot.
Prep time: 10 mins
1 Cup Cauliflower
-Wash, rinse thoroughly and cut into bite size pieces. Blanch them in hot water along with pinch of salt for few minutes. Drain and set aside.
Oil for frying
1 shallot/onion/green onion finely chopped
1/2tsp finely chopped ginger
1/2tsp finely chopped garlic
1/2tsp sesame seed oil
Ingredients for batter:
1 and 1/2tbsp all purpose flour
1tsp corn starch
1tsp rice flour
Pinch of pepper
pinch of salt
Water as needed
-Combine all the batter ingredients in a mixing bowl into a thick consistency and set a side.
For Manchurian sauce:
1 tsp soy sauce or tamari
1/2 tsp vinegar
1/2 tsp hot sauce
2 tbsp hot & sweet maggie sauce or tomato ketchup
pinch of sugar
pinch of salt
-Mix everything together in a mixing bowl and set aside.
-Heat a pan with oil on a medium flame and add the baby corn dipped into the batter and deep fry until crispy golden brown.
Remove them onto a paper towel and set aside
-Heat a wok or pan with pinch of sesame seed oil add ginger, garlic, shallots , salt and fry until onions are soft.
-Then add the Manchurian sauce mixture to the vegetables and mix thoroughly fry for a min or two.
-Finally add the fried cauliflower florets into the sauce and mix until all the florets are evenly coated with sauce.
-Turn off the stove ,serve hot and garnish with cilantro, green onion.
-Batter consistency is important it shouldn’t be too thick or too thin .If it is too thick add few drops of water.
-If it is too thin add corn starch as required.
