Moong sprouts salad is prepared with homemade moong sprouts along with sliced cucumber,tomato and seasoned with Indian spices.Great way to replenish your body with this protein packed salad.It is crunchy ,healthy and delicious.
Soak time:overnight or 6 hrs +Sprout time 16-18hrs

1 Cup whole moong dal
-Wash and soak moong dal overnight.Next day wash and place the moong dal in a cheese cloth and allow it to rest in a dark warm place.Then you start noticing the sprouts about 2 days.wash and set aside.
1/2 cup finely chopped cucumber
1/2 cup shredded carrot
1/2 cup raw mango shredded
2 tbsp finely chopped mint & cilantro or parsley
1 finely chopped tomato(deseeded)
1 tsp olive oil
1/2 tsp ground pepper
1 tsp lemon juice
pinch of salt
1/2 tsp shredded ginger
1/2 tsp roasted cumin powder
1/2 tsp maple syrup
-In a small mason jar add all the dressing ingredient and close the lid .Shake it well and set aside.
-In a large bowl add all the salad ingredient mix well and add dressing just before serving the salad.It is crunchy and delicious.
-You store the left over dressing in the refrigerator for upto a week.
-You can also add boiled potatoes,chaat masala,shredded beetroot,pomegranate seeds,strawberries,grapes or any vegetables of your choice etc..,
