Onion Chutney

Onion Chutney a perfect accompaniment for steamed idli or dosa or rice or i like to use this dip instead of hummus for snacking on my vegetables.Onions are caramelised which gives it a sweet flavour with touch of heat from the red chili flakes along with some tanginess from tamarind.

1 Large onion -Peel the skin,trim the edges and roughly chop into bite size pieces.
1 small tomato
2-3 tbsp red chili flakes or 4-5 Dry chilies
1 tbsp. Jaggery or Coconut palm sugar
dime size tamarind deseeded
1/2tsp oil
2tbsp roasted peanuts
salt to taste

For seasoning
1/2tsp oil
1/4tsp mustard seeds
pinch of hing
few curry leaves

-In a medium skillet add oil, onion, red chili flakes, tamarind, jagerry fry few 4-5mins or until onions are transluscent.
-Add finely chopped tomato and peanuts fry for few minutes until tomatoes are soft.
-Turn off the stove and allow the mixture to cool completely and blend it into a smooth paste. Transfer to a serving bowl.
-Heat pan with oil add all the seasoning ingredients all them to splutter and pour it on top the chutney. Enjoy the dip with Dosa, Idli,Vada or steamed rice.4D6F09F5-F491-4DEE-8FD3-8D3F53081084

-If you don’t like peanuts you can substitute it with Roasted chana dal or cashews or sesame seeds.
-If you don’t like it spicy skip red chilies or reduce chilies to your liking.
