Paneer(cottage cheese) cooked in spinach gravy along with some Indian spices and topped up with fresh cream.Serve hot with steam rice,Indian flat breads(Roti, Naan , Kulcha).
5oogm Spinach(wash,blanch.puree and set aside)
250gm paneer(Indian cottage cheese cubed)
1 medium onion(finely chopped or pureed)
1 medium tomato pureed
1Green chili finely chopped
1/2tsp garlic paste
1tsp cashew paste(Soak and blend with 5-6 cashews to fine paste)
1tsp fresh cream (optional) for garnish
1tsp shahi paneer masala(I use this store bought masala)
salt to taste
1)Heat oil on medium heat,add chopped onions,green chili,garlic paste,salt. Saute until translucent and add tomato mix well.
2)Cook until tomato and onion paste comes together.Then add masala , spinach puree mix well.Bring it to a boil and add paneer mix well.cook for 2-3 mins.
3)Turn off the stove.serve hot with steam rice,Indian flat breads(Roti, Naan, Kulcha).
-you can avoid cream by adding few tsp of yogurt or cashew paste.
