Spinach corn fritters

Spinach & corn pakora (fritters) are prepared with chickpea flour, rice flour along with some seasoning and deep fried or baked until it is golden brown and crispy. Perfect tea time gluten free snack.

2 cups chopped spinach
2-3 tbsp mint leaves
1/4 cup chickpea flour
1/4 cup rice flour
1/2 cup frozen or fresh corn
3 green chilies finely chopped
1/2 tsp red chili powder
1 tsp cumin seeds
small piece of ginger
2-3 cloves of garlic
pinch of turmeric
oil for deep frying

1)In a blender add corn+green chilies+ginger+garlic+cumin seeds+salt+cumin seeds+mint to form a coarse paste.
2)In a large bowl add finely chopped Spinach, Corn paste,rice flour,chicken flour. Mix everything together without adding any water.
3)Heat oil for frying and once the oil is hot enough then take small portion of mixture by hand or by spoon and drop 3-4 small fritters into the oil.
4)Deep fry until it turns golden brown. Keep stirring occasionally until they cook evenly.
5)Place the fritters on a paper towel to remove any excess oil. Repeat the process for rest of the mixture . Serve hot with tea.


-If you want to bake them add less flour and bake at 350F for 20-30mins until they’re crispy. Stirring occasionally.
-Spinach, corn has moisture and it helps to bind the flour without adding water. If needed add few drops.
-Do not overcrowd fritters in oil they will not cook evenly and become soggy.
