Fresh Turmeric root pickle it looks similar to ginger but yellow in color.Turmeric has many health benefits and usually it is available in Indian grocery store.
I love to eat this pickle as a side for curd rice or top it on salad or with some dal and steamed rice or with roti or eat as is.
It is prepared by peeling the skin of the turmeric root and marinating in fresh lemon juice along with some Indian spices.
Prep time:10 mins
1/4 cup thinly sliced or diced fresh turmeric root
2-3 tbsp thinly sliced or diced fresh ginger root
1 to 2 green chilies
2 lemons freshly squeezed juice
Salt to taste
1/2 tsp roasted fenugreek seed powder
1/2 tsp roasted mustard seed powder
1 tsp mustard oil
1 dry red chili
pinch of hing
-In a small bowl add all the ingredients (step 1)along with roasted fenugreek seeds powder& Mustard seeds powder mix well and set aside.
-Heat a pan and oil,red chili and hing.Fry for few minutes.Allow it to cool.
-Add the oil allow the flavors to marinate well and add it as a side for your favorite recipes.
-You can store this pickle upto 2 weeks in refrigerator.
-I personally prefer to make it in small batches.
-You can make this pickle in 2 ways .Leave it at step 1 and enjoy or add the seasoning.Both ways it tastes delicious.
