Tomato chutney is a Andhra spicy chutney prepared by sauteing tomato’s in oil until all its moisture is evaporated and seasoned with some Indian spices. It is easy to prepare and delicious last for upto a week.

Cook time:20-25 mins
Ingredients:
2-3 cups of fresh tomato’s(Roma or Vine) roughly chopped
small dime size seedless tamarind
pinch of turmeric
salt to taste
1 tsp oil
For Seasoning:
1 tbsp roasted black mustard seed powder
1 tbsp roasted fenugreek seeds powder
3 tbsp red chili powder
2-3 tbsp sesame seed oil
Pinch of hing
1 tbsp red chili flakes or 1 dry red chili
1/2 tsp mustard seeds
Procedure:
-In a large sauce pan add oil chopped tomatoes,salt,turmeric and tamarind.Cook on medium heat until the moisture is evaporated from tomatoes and form a thick paste for about 20 mins.
-Transfer the tomato mixture into a bowl and add roasted mustard seed powder, fenugreek seed powder ,red chili powder.Mix well and set aside.
-Heat a pan on a medium heat add oil,mustard seeds,red chili and hing.Allow the seeds to splutter.Turn off and allow the oil mixture to cool down completely.
-Then add it to the tomato mixture.
-Mix well and serve hot with some steamed rice or dosa or idly or uttapam or upma.

Looks very tempting, must be hot with so many red chilles.
