Roasted Tomato & Pepper Salsa

I love homemade salsa they’re fresh and delicious.It can be prepared by using roasted tomatoes,jalapeno’s,green bell pepper along with some lemon juice and cilantro.Perfect dip for chips,quesadilla,grilled vegetables.It tastes tangy,spicy and sweet.

Prep time:5 mins
Cook time:20mins

Ingredients:
4 medium size tomato
1 Jalapeno (de-seeded if you don’t like it spicy)
1 small shallot
2 garlic cloves
few cilantro leaves
1 green bell pepper(cut into half,membrane removed and deseeded)
few drops of oil
salt & pepper to taste
Juice of half lemon

Procedure:
-Preheat oven to 350(F). Apply oil to tomato,jalapeno, bell pepper . place it on the baking tray and roast for 20 mins.
-Allow it to cool.Remove the skin and place it in the blender with rest of the ingredients.
-Blend it smooth and transfer into a serving bowl.
-Serve this dip with chips,quesadilla.
