Vada(lentil donut)

Vada is a South Indian breakfast prepared using urad dal soaked for 2-3 hrs.Grind it into a smooth mixture and the batter is seasoned with ginger chili paste or black peppercorn or grated fresh coconut.Deep fry until golden brown and crispy.

Soak time:2-3hrs
Prep time:20-30mins

Ingredients:
1 cup whole urad dal (Wash,soak and rinse thoroughly and set aside)
1 tsp crushed whole peppercorn
fresh grated coconut
salt to taste
1 tsp cilantro chili paste

Procedure:
-In a blender add all the ingredients and blend into a coarse to fine batter.Use little water during blending.
-Heat a heavy bottom vessel with oil on a high medium heat and once it is hot enough.
-Dip your hand in cold water take some batter spread evenly in your palms evenly and place a hole in the center and drop the donut into oil.
-Fry until the vada is golden and crispy.
-Repeat the process for rest of the batter and serve hot with some coconut chutney or tomato chutney or onion chutney along with some hot sambar.

    I’m a huge fan of vada, but I never added grated coconut in it, and I will try this next time.
