Sprouted moth bean sundal perfect healthy proein rich snack.You can it as is or serve as side for steamed rice or quinoa or millets or add it to your green salad.
1/3 cup sprouted moth bean
1/3 cup shredded carrot and beet root
salt to taste
pinch of turmeric
For coconut mixture:
3-4 tbsp fresh coconut shredded
2-3 green chilies
few curry leaves
small piece of ginger
-Make paste of this mixture and set aside.
1 dry red chili
1/2 tsp mustard seeds
1/2 tsp oil
pinch of hing
1/2 tsp urad dal
-In a instant pot pressure cook sprouted moth beans for 3mins with few drops of water,salt and turmeric.Set aside.
-In a pan add seasoning and fry until golden.
-Add grated carrot ,beet root and coconut mixture fry for few mins.
-Now add cooked moth beans mix thoroughly until beans are coated with the mixture.
-Turn off the flame and serve hot.
Note:If you also use regular cooked moth bean or replace it with any other beans of your choice for this recipe.
