Aloo Methi

Aloo Methi simple, delish and tasty recipe.Potato cooked with fenugreek leaves and some Indian spices.Serve it with steam rice,quinoa or eat as is.

3 cups fresh fenugreek leaves(Remove leaves from stem,wash,chop and set aside)
3 medium yellow potatoes(Peel,wash and cubed)
2 cloves garlic finely sliced
2 green chili slit
For Seasoning:
1/2 tsp turmeric powder
1/2 tsp cumin seeds
1 tsp dry mango powder
1/2 tsp Red chili powder
salt to taste

-Heat a pan on medium heat add oil ,cumin seeds,potato,garlic,green chili,turmeric powder,salt.Cook it covered stirring occasionally.
-Add few drops of water to avoid burning.
-Once the potatoes are soft enough add chopped fenu greek leaves and fry until the leaves are wilted.
-Add rest of seasonings mix well.
-Turn off the stove.Serve hot as side for roti or rice.
