Fresh methi leaves cooked with corn,rice and some spices it is sweet,spicy and flavorful rice.Great for lunch box and best one pot meal for lazy days.Serve with some raita.
Prep time: 5mins
1 cup sona masuri rice or basmati rice-Wash and set aside.
1/2 cup frozen corn
1 cup fresh fenugreek leaves
1 tsp ginger garlic paste
1 tsp Avocado oil
1 tsp ghee
salt to taste
2 green chilies finely chopped
1 tsp garam masala
1 and half cup water
-In instant pot press saute button add oil and ghee once hot enough add ginger garlic paste,green chilies,garam masala,methi leaves,corn.Saute until fragrant.
-Add rice fry for few minutes and now add water,salt mix well.
-Close the lid and pressure cook for 6 mins.
-Allow the pressure to release naturally and Serve hot with raita.
