Pumpkin curry is sweet,tangy and nutty delicious curry.Serve it as a side with steamed rice or cooked quinoa or millet or cauliflower rice or eat as is.

1/2 Fresh cut pumpkin-Wash,peel ,de-seed and chop into bite size pieces.Set aside.
2-3 green chilies
few curry leaves
1 tsp tamarind juice
2 tbsp roasted sesame seed powder
2-3 tbsp Jaggery powder
pinch of turmeric powder
1 tsp oil
1/2 tsp mustard seeds
1/2 tsp urad dal
1/2 tsp chana dal
pinch of Hing
-Heat a pan with oil add all the seasonings,green chilies,curry leaves and fry until golden brown.
-Add Pumpkin pieces mix well and cook it covered on medium low heat.
-Once the pumpkin are soft then add tamarind juice,jaggery powder and sesame seed powder mix well.
-Turn off the stove and serve hot with steamed rice or quinoa or cauliflower rice or eat as it :).
