Spicy Vegan Bean Burger

This healthy low fat bean burger recipe uses black eyed beans and lots of vegetables to form a healthy ,fiber rich protein patty.Seasoned with lots of Indian spices.

Prep time: 30mins
Cook time: 15mins

Ingredients for Bean patty:
3-4 medium size boiled potatoes(mash it fork and set aside)
1 medium shredded carrot
1/2 cup corn
1 shallot finely chopped
1 green bell pepper finely chopped
1 and half cup boiled blacked eyed peas(mash it with fork and set aside)
1 finely chopped jalapeno
4 tbsp freshly chopped cilantro
salt to taste
2-3 tbsp flax seed powder
2 tbsp coarsely ground sunflower and pumpkin seeds
1 tbsp ginger garlic paste

For seasoning:
1 tsp cumin seed powder
2 tbsp red chili powder
1 tbsp dry mango powder
2 tbsp coriander powder
pinch of turmeric

For granish
-butter lettuce leaves
-cucumber,onion instant pickle (add few drops of lemon juice,salt and chaat masala.mix well it together and set aside)

-In a heated pan saute shallot,ginger garlic paste,jalapeno,corn,bell pepper along with all the seasoning in a teaspoon of oil.
-Remove from heat and transfer it to a bowl along with other ingredient to form a dough.
-The mixture will be thick and use your hands to put it together.
-Shape the mixture into patties about 1/2 inch thick.
-For pan frying heat 2 tbsp of avocado oil and cook each patty until 3-4 mins on each side or until done.
-Serve on burger buns with your favorite toppings/garnishes.
