Pineapple Rava kesari is a south Indian dessert made with dry roasting semolina in ghee along with some cashews,raisins and mixing it with boiling water,sugar,cardamom.

1 cup roasted semolina/sooji
-Dry roast in a table spoon of ghee on a medium to low heat.Stirring occassionally & until it is fragrant.
3/4 Cup sugar
1 cup finely chopped pineapple
2-3 tbsp Ghee
2 tbsp cashews and raisins (Roast them in a tbsp of ghee and set aside for garnish)
pinch of cardamom
few strands of saffron or any food color of your choice
2 and 1/2 cups of water
1)Heat a pan with water and bring it to a boil then add sugar allow it to dissolve.
2)Add cardamom powder,saffron,roasted semolina,pineapple,nuts and mix well continuously until no lumps formed.
3)Cook it covered on low flame until water evaporates.Add 2 tbsp of ghee on top.Turn off the heat and serve warm.
